Cabernet Sauvignon.
The grapes were hand-harvested in the cool morning hours to ensure optimal flavor. At the winery, the fruit was hand-sorted, gently de-stemmed and lightly crushed. Following a 10-21 day maceration period to maximize color and flavor extraction and to also polish the tannins, the wine was aged in 100% French oak barrels (29% new) for 19 months.
Deep red and opulent.
Ripe black fruits such as blackberries, plums and cassis. It also has notes of spices such as black pepper and cloves, along with nuances of tobacco, vanilla and a touch of toasted oak, resulting from its aging in barrels. Structured and well-balanced. The tannins are firm but well-integrated, providing a silky and pleasant texture. The predominant flavors include ripe black fruits, such as blackberries and currants, accompanied by notes of dark chocolate, coffee and spices. The finish is long and persistent, with a touch of oak and a pleasant sensation of warmth.
Ideal pairing with red meats such as steak, beef ribs, roasted lamb and grilled meats. It also pairs perfectly with game dishes such as venison, wild boar and other game meats. Strong cheeses, such as aged cheddar, aged gouda and blue cheese, complement this wine wonderfully. Italian dishes, including pasta with meat sauce, lasagna and mushroom risotto, are excellent accompaniments. In addition, hearty side dishes, such as roasted vegetables, mushrooms, peppers and eggplant, enhance its complex flavors. For a dessert pairing, dark chocolate and cocoa-based desserts further enhance the tasting experience.
